Um das Leistungsvermögen der MIYABI Messer optimal ausschöpfen zu können, muss auch die Schneidunterlage stimmen. Besonders gut harmonieren diese Premium-Messer mit den neuartigen MIYABI Schneidbrettern aus Hinoki-Holz. Ihr großer Vorteil: Die empfindlichen Schneiden werden dank der spezifischen Eigenschaften dieser Holzart nur gering abgenutzt. Hinoki ist eine nur in Japan vorkommende Zypressenart, die übersetzt „Holz des Feuers“ heißt. Hinoki ist sehr leicht, ungewöhnlich langlebig und widerstandsfähig. Es ist stark wasserresistent und von Natur aus mit antibakteriellen Eigenschaften ausgestattet. Alle MIYABI Schneidbretter werden aus einem einzigen Holzstück aus dem Randbereich des Stamms leimfrei gearbeitet.

Cooperation with famous ”Iron Chefs“
Professionals and hobby chefs alike are beginning to appreciate the value of sharp Japanese knives for their western cooking style. MIYABI knives are among the sharpest of their kind. They are knives that will please the most discerning consumers in Japan and all over the world.
Chef Rokusaburo Michiba has assisted ZWILLING J.A. HENCKELS in developing the MIYABI knives. He is one of the most famous Japanese chefs, an expert on the country’s cuisine and a household name through his appearance on the widely popular series “Iron Chef”. He advised ZWILLING J.A. HENCKELS on all questions concerning the marriage of Japanese knife tradition and western taste.
In 2010 ZWILLING J.A. HENCKELS joined forces in North America with another „Iron Chef“. Masaharu Morimoto also made his name in Japan in the “Iron Chef” series; in the U.S. he is one of the stars of the spinoff “Iron Chef America” and has his own restaurants.
