Cooking is not just a purely rational act defined by functionality. The ritual character of cooking can be further enhanced by the feeling of working with a knife, like no other in the world. Each and every knife in the Euro Stainless range crafted by Bob Kramer is an unparalleled work of art with a unique damask pattern – as individual as the person whose tool it is. 100 layers of two different types of steel with varying grades of hardness enclose the exceptionally hard core of the blade, 50 on each
side. A special treatment changes the surface structure of each layer and gives each and every blade its individual pattern, known as Chevron damask. An extra wide blade on the Chef and Santoku knives creates more knuckle clearance when chopping and serves as an excellent platform to transport cut materials from cutting board to pot. The spine and choil (at the heel of the blade) is rounded and polished for safety and comfort. The edge runs from tip to heel thus its entire length is available for cutting and chopping. The beautiful Micarta linen handle perfectly matches the blade, both aesthetically and functionally. The material is moisture-resistant and extremely dimensionally stable – thereby ensuring that the handle and the blade survive well even after frequent and long use over many years.

 

The Material

The core of the blade consists of extremely hard, ultra-homogeneous SG2 powder steel that has undergone
special treatment to improve its performance. The result is a durable blade with outstanding initial sharpness
and sharpness retention that simply cannot be achieved with conventional types of steel.

Sharpen like a master

Only re-sharpen all KRAMER by ZWILLING knivesvwith appropriate professional tools to retain their sharpness, due to the high grade of hardness of the material. Regularly draw the blade across the KRAMER by ZWILLING leather stropping block to restore the knife's cutting ability. If your knife's sharpness noticeably diminishes, we would recommend sharpening the blade with a KRAMER by ZWILLING sharpening stone. These sharpening stones are perfectly designed for these ranges of knives, but are also ideal for professionally sharpening all other types of steel knives. The sharpening stones are available, as required, in various grain sizes – from #400 grit for major correction work or in the event of breaks in the blade, to #10,000 grit for an extremely sharp finish.

Bob Kramer has achieved cult status among chefs and knife aficionados and his knives are much sought-after works of art. The waiting list is long for his knives, even if a small knife can cost thousands of dollars. Bob Kramer forges only a handful of knives personally by hand every week in his factory in Olympia, Washington. Anyone who finally holds "their very own" Bob Kramer knife in their hand after waiting a year or so for it, will never want another knife. Bob Kramer has now incorporated his extensive knowledge and life-long experience into a cooperative partnership with ZWILLING. The joint goal: More people should be able to call a knife that meets Bob Kramer's exacting quality standards their own.
