The advantages of enameled cast iron

1. The strength and heat-retention properties of cast iron have been appreciated for millennia in the kitchens of Central Asia.

2. Casting iron is a carbon-rich iron alloy, one of the materials that retains heat best, diffuses it slowly and distributes it absolutely evenly.

3. Once cast iron is hot, its heat-retention properties allow you to turn the heat down to a minimum for gentle simmering and reduced energy consumption.

4. Cast iron also retains cold: refrigerate before serving and your cast iron product will remain cool at the table.

5. Enamel, which is made mainly of glass, is extremely durable.

6. Enameled cast iron is compatible with all heat sources, including induction.

The secrets of the staub lid

Staub self-basting-sytem
The improved design and substantial weight of the flat lid with special spikes, results in excellent moisture retention and even distribution for continous simmering.

More benefits

  • The distinctive brass or nickel-plated center knob can withstand 482°F (250°C).
  • The lid features a raised rim to serve as a spoon rest or hold ice cubes – a special technique to enhance internal condensation during cooking.
  • Our unique handle design ensures a secure and comfortable grip.
  • 10% more moisture: The Staub Cocotte retains more moisture during the cooking process: 10% more moisture is retained than in competitors’ pots after cooking for 55 minutes.
  • 9 times more effective: The self-basting system based on the specially contoured underside of the flat lid creates a continuous dripping effect over the entire interior. The Staub lid distributes moisture nine times more effectively than conventional lids.

Expert in majolica-email

Special majolica enamels: comprising 100% glass
The special technique used to give majolica enamels their color results in uniquely glossy enamel in deep and intense shades.
The three-coat majolica enameling process:

1. Black base coat applied to prepare the rough cast iron, guaranteeing a superior finish by smoothing over small irregularities in the cast surface.

2. Colored enamel coating.

3. Finish coating, a special majolica formula that gives the colors a high gloss and very intense shade with marked contrasts.

Table culture in various colors

With their fine quality and exquisite enamel finish, Staub products go elegantly from the kitchen to the table. The outer surfaces are given at least two coats of enamel using an innovative technique.

Matte black finish

  • Pot interiors are enameled with a matte black finish.
  • High-quality enamel offers improved resistance to thermal shocks and scratching.
  • Ideal properties for searing, roasting and caramelizing.
  • Favored by renowned chefs and people who love to cook.
  • Easy to clean and convenient to use.

Precautions

  • Regardless of the heat source used (electric, gas, induction), enameled cast iron cookware must be heated gradually to avoid thermal shock and possible damage.
  • Select a flame or element that is smaller or equal to the dimension of the bottom of your Staub pot. Allowing flames from gas ranges to envelope the sides of the pot may cause discoloration or damageto the enamel.
  • We recommend the use of wooden or plastic utensils.
  • Do not overheat an empty pot; all cooking should be monitored.
  • To avoid any risk of burns, always use a potholder or oven mitt.
  • Do not place a hot vessel on an unprotected surface.

After use care and maintenance

After the pot has cooled from cooking, wash in warm water with dish- washing liquid and dry thoroughly with a clean cloth. Let pots sit in the open air before storing. Do not use bleach or abrasive detergents – if residue remains after cleaning, soak in warm water to loosen. Dishwasher use is possible, however the harsh detergents and abrasion with other utensils may cause damage and affect non-stick properties. Any products with wooden handles should not be put in a dishwasher at any time. Do not stack or store enameled objects without protecting the exterior surface. The knobs and handles may loosen with use. Check the tightness from time to time and gently retighten them if necessary.
