For Bob Kramer, the art of knife-making consists of reducing each and every knife to its veryessence. Each individual element has to be precisely designed so that the knife performs the functionfor which it was intended. This does not equateto omission, rather the conscious awareness of a lifestyle that focuses on the essential. Euro Essential represents a knife series created for everyday use in demanding gourmet kitchens. The well-balanced blade, with its typical broad KRAMER by ZWILLING shape, also offers plenty of room for larger hands. A professional special steel was selected, the hardness, sharpness and strength of which has proved its worth on a number of razor blades. The handle – the edges of which, like the blades, are rounded by hand – always sits securely in your hand, thanks to its ergonomic shape and soft-touch plastic. These knives have proved themselves as reliable, easy-care implements for every task in the kitchen – simply essential!
The Material
The blade is made from a professional special steel, which is also used for razor blades, among other things: FC61. FC stands for “fine carbide” – the carbides in this steel are distributed extremely finely andevenly. The special structure of the steel ensures wonderfully fine cutting and produces an even cutting edgewith excellent initial sharpness and sharpness retention. The special ice-hardening of the steel creates anextremely durable blade with a hardness of approximately 61 HRC.

Sharpen like a master
Only re-sharpen all KRAMER by ZWILLING knivesvwith appropriate professional tools to retain their sharpness, due to the high grade of hardness of the material. Regularly draw the blade across the KRAMER by ZWILLING leather stropping block to restore the knife's cutting ability. If your knife's sharpness noticeably diminishes, we would recommend sharpening the blade with a KRAMER by ZWILLING sharpening stone. These sharpening stones are perfectly designed for these ranges of knives, but are also ideal for professionally sharpening all other types of steel knives. The sharpening stones are available, as required, in various grain sizes – from #400 grit for major correction work or in the event of breaks in the blade, to #10,000 grit for an extremely sharp finish.

The perfect art of knife-cutting
Bob Kramer has gathered a wealth of experiences throughout his varied life. When working in the most diverse kitchens, he learned not only how to use a wide variety of types of knives, but also the mysteries of knife-sharpening, before finally driving through the USA in a converted truck as a mobile knife-sharpener. The desire grew in him to produce his own high-performance knives that would be easy to sharpen and would retain their intact cutting edge even after heavy use. For over 20 years he has been passionately devoting himself to perfecting the art of blade-forging. This experience forms the basis for a collection of high-performance knives: KRAMER BY ZWILLING.
