The ergonomically shaped handle made of cast stainless steel fits comfortably in the hand and always stays pleasantly cool, even at high temperatures. The professional pan is equipped with the special ControlInduc® technology. When used on induction hobs, this ensures that the temperature rises to a maximum of 250°C during frying. This prevents your pan from overheating. The 7-ply material consists of a total of seven layers of stainless steel and aluminum, which ensure even heat distribution across the entire surface right to the edges. Thanks to TriplInduc® technology, the pan also performs up to 30 percent better on induction hobs. However, it is also suitable for use on all other hob types. An additional surface finish with Silvinox® prevents signs of wear and tear such as discoloration or fingerprints from sticking and makes cleaning the pan much easier. ControlInduc^®:

Induction cooktops generate very intense heat in a very short time. To ensure the ideal frying temperature is not exceeded, Demeyere has developed pans and woks with ControlInduc. This is a safety system that limits the maximum temperature of the pan on induction cooktops to 250°C. Up to +/-220°C, the product with ControlInduc heats up like any other pan. Above this temperature, however, the induction power gradually decreases and stabilizes between 245°C and 250°C. You remain at the ideal frying temperature (180°C - 240°C, depending on the food). As soon as you add colder ingredients, such as a piece of fish or pancake batter, to the pan, it cools down and the induction power automatically increases again. Even if the pan is left empty on the cooktop, perhaps because you forgot it, it will never overheat. This special property of pans with ControlInduc is made possible thanks to the special magnetic material used for the exterior of the pan.
It is a special alloy that remains magnetic up to a temperature of 250°C. Above this temperature, it loses its magnetic properties. This reduces the energy absorbed by the induction coil. An induction coil requires magnetic material to generate heat. When the magnetic properties are no longer present, no more heat is generated. This way, ControlInduc eliminates warm-up times. The pan is always hot – with no risk of overheating, especially with coated pans.

Silvinox® surface treatment:

Most Demeyere products are made of stainless steel and treated with "Silvinox®," a unique electrochemical surface treatment process that enriches the material and removes iron and impurities from the surface. This makes the stainless steel easy to clean and resistant to fingerprints, harsh soaps, and highly acidic foods. The products retain their silvery white color even after years of use.

New technology – closed rim:

Exposed aluminum on the rim, when combined with aggressive cleaning agents, can lead to corrosion, which in turn can create sharp edges. Demeyere's new technology seals the exposed aluminum with a layer of stainless steel, protecting the rim and ensuring the pan's longevity.
